Yesterday's Caramel Apple: A tiny tart of brioche, sauteed apples, topped with a dome of cinnamon mousse, caramel glaze, and chocolate "cinnamon stick" and "leaf." Served with apple confit and caramel amaretto ice cream.
Today's Dulce de Leche: Lots of little things going on here. We have coconut frangipane soaked with rum simple syrup and topped with dulce de leche diplomat cream and a chocolate garnish. Next to it is a deep fried chocolate truffle filled with dulce de leche. In front of that is a wedge of caramelized banana. On the plate is a swoosh of caramel rum sauce and another swoosh of coconut foam. Last but not least is a sorbet of papaya, guava, mango, and passionfruit.
But we weren't done yet! The Board of Trustees is here this week, and Chef Knaster is in charge of desserts for a couple of their banquets. Hope and Arline made this one that was served in American Bounty today. It's a Mocha Terrine--chocolate flourless cake on the bottom, creme brulee in the center, and chocolate coffee mousse on the outside. Topped with whipped cream and cocoa nib nougatine, and served with creme anglaise and cocoa nib foam. Senique and Arline are in plate up mode here and are too focused to notice that I captured them on film. Tomorrow there's another plate up for the Board, but since I helped with the one today, I have to stay behind and clean the bakeshop. Boring compared to the adrenaline rush of putting the nougatine on each plate.
